This simple salsa reflects the colors of the Mexican flag

Ingredients:

Equal parts Roma Tomato,

Onion (White, or red), and

Fresh Cilantro (Known as coriander in the UK)

Jalapeño, or Serrano (or a combination) Chiles - To taste. Use at least one.

Salt to taste.

Start by cutting the Roma Tomatoes open and remove all the seeds. Next, dice the tomatoes, and onions. Chop the Cilantro. Combine all ingredients in a bowl. To prepare chiles, bisect the chiles, then with a spoon remove the seeds and the white rib meat then mince. Add salt and chiles to taste.

For a liquid salsa put all ingredients, except cilantro in a food processor and pulse until desired consistency is reached. Stir in Cilantro to taste
